OSTRICH SESAME PATIES
500 g ostrich mince
100 g wild rice, cooked according to instructions on the packet
3 tbsp sesame seeds
1 egg
½ tsp hemp seeds (optional)
1 tbsp olive oil + extra for cooking the patties
1 onion, chopped
3 garlic cloves, minced
½ handful of fresh coriander, chopped
1 tsp oregano, dried
1 tsp thyme, dried
Salt and pepper
Mix the ostrich mince with the cooked rice in a large bowl, add the sesame seeds, egg, and hemp seeds.
Heat a spoonful of olive oil in a pan. Add the onion and cook for 3 minutes. Then add the garlic, coriander, oregano and thyme, cooking until fragrant or for about 1 minute. Add the contents of the pan to the ostrich mixture. Mix it all together and sprinkle with salt and pepper.
Shape the individual patties and place them on the baking sheet, leaving some space in between each patty.
Bake at 180 ˚C for 20 - 30 minutes. Alternatively, you can cook them in a frying pan.
