ENERGY Bites
50 g walnuts
80 g almond flakes
150 g coconut flakes
200 g medjool dates, pitted
50 g cranberries, dried
1 tsp vanilla essence
2 tbsp maple syrup
Pinch of kosher salt
In a food processor, blitz the walnuts, almonds and coconut flakes. Add the dates and cranberries, and blend until everything is well combined.
Add in the vanilla essence, maple syrup and salt, and form into small balls.
Cover the balls in shredded coconut (optional).
Place in the fridge for at least 30 minutes before serving, or store in a sealed container.
You can make these in different ways with different choices of ingredients - nuts, dry fruits, and cacao. Customize them according to your taste.
